Gluten Free Lockdown Pie

I made a pie! And I want the world to know! I haven’t eaten a pie in years, as finding one that is gluten and dairy free just seems too difficult. With all this free time in lockdown, I felt like it was time for me to actually try and get better at baking free from food. Before I was free from, my baking and cooking was pretty good, however I lost my passion for baking when my diet changed. Gluten free baking is much harder, with recipes that would normally contain 4 ingredients now requiring xanthiam gum etc. Who has time for that??

So, the other day while I’m tescos, I found something that sparked my interest. Roll out puff pastry that is gluten free! I chucked this in my trolly like it was the last toilet roll on the shelf and trotted home determined to make a pie. 

I decided to make a chicken and leek pie and I have to say it was amazing! It was nice to have a pie and the pastry turned out ok too! If you are having a gluten free guest over for dinner or wanted to make something homemade and gluten free I would recommend this; as it took me 40 mins including cooking time. Epic! 

Recipe: 
1. Fry three pieces of smoked bacon in a pan till crispy.

2. Chop one leek, one onion and four cloves of garlic - 
Take bacon out of the pan and add veg to the hot fat. 

3. Drizzle with garlic oil and stir in herbs of your choice I chose thyme.
Add some salt, pepper and lea and Perrin.

4. Cook for 10 mins then add frozen peas and a stock cube along with 
one cup of water and cooked chicken.

5. Simmer for 5 mins to reduce.

6. While waiting for filling to reduce, cut a circle of gluten free puff pastry out -
This must be the size and shape of your pie dish!

7. Add filling to pie dish and pop the pastry lid on top!

8. Prick holes in the pie lid with a fork

9. Bake in oven for 20 mins on 220C

Perfect quick chicken and leak homemade pie! 

Oh yeh and it’s gluten free too!
